Freshen Up Your Diet This Spring!

Farmer’s Market anyone??

When it comes to produce, spring is one of my favorite times of the year! Aside from the variety, my absolute favorite fruit is finally in season. Mangoes

Springtime is also the beginning of Farmer’s Market season, which you most definitely need to be taking advantage of! Shopping local is good for your community and it ensures that you’re buying fresh, in-season produce.

So what are you waiting for? Here are some recipe ideas to transition your diet into spring!

Asparagus

Who doesn’t love fresh asparagus?

Take 30 minutes out of your day to whip up this delicious Creamy Vegan Lemon Asparagus Pasta from one of my favorite food bloggers, The Minimalist Baker!

Strawberries

I will be the first to admit that I don’t eat nearly enough fruit. But there are 3 fruits that I’ll eat all day everyday if you let me and one of them is strawberries! However, I’m extremely picky about my berries and only eat them when they’re in season.

And instead of baking your strawberries into pastries, I just recommend slicing them and enjoying fresh strawberries for breakfast! Personally, as you’ll see from my Instagram, I love slicing strawberries and pairing them with granola and yogurt. I’ll also enjoy fresh berries with cottage cheese. Delish!

Spinach

While you can get it pretty much all year round (depending on where you live) everything tastes better when it’s fresh, and spinach is no exception!

Skip the bagged stuff this spring and pick up some fresh spinach before heading to the kitchen for this brilliant take on grilled cheese from Sweet As Honey Clean Eating.

Like I said, mangoes are my favorite spring fruit. And my favorite mango dish?? Well, all of them. BUT! This mango slaw from ifoodreal is a lifesaver! It’s easy, delicious, perfect for spring weather and a hit whenever I bring it to work functions.
